What do you do on National Bacon Day?

If it weren’t for my friends Benny and Greg, I would have never known that today was National Bacon Day? Kidding, no I’m not kidding…Apparently this annual Holiday was started back in 2004, and falls on the Saturday before Labor Day. Bacon is a favorite food the world around, and creative chefs have incorporated this into jarred mayonnaise (called baconaise), toffee, ice cream and chocolate. It leaves us all wondering, “what are they going to think of next?”

I was actually supposed to make these sandwiches for some friends on Wednesday, but serendipity intervened and here we are!

Today we enjoyed some BLAT sandwiches with a side of fried sweet potatoes. Definitely not a weight watchers meal, but what else are you going to have on this porky holiday?

Our BLAT sandwiches consisted of thick cut organic bacon that I had picked up at the farmer’s market last week, red leaf lettuce, creamy avocado and sweet heirloom tomatoes, all slathered together with my homemade mayonnaise…My friend Linda would have been proud!
