With this chilly weather, I know that everyone’s go to food item is usually a delicious soup to quickly warm you up. If you are like me, I prefer hearty soups, and one of the best to make is my quick potato soup. Since I just love potatoes, I always have them on hand. For this recipe, you can quickly steam or boil some up and even keep some in the freezer for a quick meal or a side dish.
This soup is really easy to put together, it uses my cheese sauce as a base for the soup to which I add a few more ingredients. I was still experimenting with some sauces from a company called Crazy Bitch Sauces (no, I’m not kidding) and there is one called Chicken Shit Sauce (I call it CSS, and yes, I’m serious!). It has a really great, spicy mustard flavor and is good with just about anything that needs a little tang. I decided to cook up some ground beef and added the sauce to the beef and then topped the potato soup with it…it was hearty, delicious and really flavorful…and most important of all, it was quick and easy to make!
Meat & Potato Soup
1 recipe of cheese sauce base
2 cup milk
¾ cup CSS sauce
½ pound ground beef
1 medium onion, (reserve 2 tablespoons)finely diced
2 cloves garlic
1-2 teaspoons garlic salt
S&P
Olive oil
2 cup steamed potatoes, diced
Make the cheese sauce, then add the milk, ¼ cup of CSS sauce, S&P, steamed potatoes and let it thicken slightly over low heat then remove from the heat and set aside. Add a little olive oil to a medium sized frying pan and add the onions, then cook until they begin to caramelize. Then add the garlic and allow it to soften, then add the ground beef and mix it all together. Add the garlic salt and cook until all of the meat is no longer pink. Next, add the ½ cup of CSS sauce and cook with the beef until the sauce has reduced and thickened, then set aside. Pour some potato soup in a bowl and top with the ground beef or mix it all up together…whatever you do, it’s still delicious.
