Chocolate ganache is a very rich and creamy mixture of chocolate and cream that has many different uses. You can use it as a filling for cakes, fill chocolate shells to make truffles or roll the filling itself into truffles and dip into cocoa powder, or you can use it to make chocolate pate or melt it and use it to glaze your cakes. This delicious recipe is versatile and delicious and very easy to put together.  Since today was Valentine’s Day, I made some chocolate pate that I molded into a heart shape and topped with beautiful raspberries for a heart stopping presentation. Below you will find pictures of the truffles rolled in cocoa powder and you will also see a photo of the beautiful consistency of this delicious ganache. And since it is Valentines Day….

I have been celebrating Valentine’s Day for so many years, but never really knew who or what the holiday stood for. I took a brief look at historical documentation on how the holiday came about, and was surprised that there actually was a St. Valentine.

The Early Medieval  documents of Saint Valentine showed that he had been persecuted as a Christian and jailed by Roman Emperor Claudius ll. Claudius however, was impressed by Valentine and attempted to get him to convert to Roman paganism in order to save his life. Valentine refused and tried to convert Claudius to Christianity instead. As a result, he was sentenced to death and the night before his execution, he is reported to have performed a miracle by healing the blind daughter of his jailer, whom he had befriended and fallen in love with. On the evening before Valentine was to be executed, he wrote the first “valentine” card himself and addressed it to this young girl who he invariably identified as his beloved. The note read…

“Thou are my love and I am thine,

For I am your Valentine”

So, on this day of love where 1 billion cards are exchanged along with 15 million email cards, 100 million red roses and 35 million heart shaped boxes filled with chocolates, I leave you with this lovely and simple quote from Robert Heinlein, “love is the condition in which the happiness of another person is essential to your own.”
