One of the most popular cookie flavors for kids other than the chocolate chip cookie is the snickerdoodle. Instead of doing a simple cookie, I wanted to translate that same flavor into a mini cake or muffin. I’ve seen this muffin done many times before, but I wanted to do something extra by filling it with a buttercream. I’ve seen other types of muffins filled with cream, but they always do it incorrectly, so that is another reason that I wanted to fill these to show you a great way to do these that won’t show at all!.
You can use whatever recipe works best, I just happened to use my vanilla cake base recipe that is currently for sale in my E-shop…but don’t use a cake mix…they are so full of chemicals and baking from scratch is really not difficult at all when you slice it open.
These little gems are just delicious and go so perfectly for a lunch box or brown bag dessert or simply a little snack to keep around the house.
Snickerdoodle Mini Cakes
½ recipe yellow cake base
½ recipe buttercream filling
1 ½ sticks butter, melted
1 ½ cups sugar
6 teaspoons ground cinnamon
Make the muffins and let them cool. Then take a thin sharp knife and put a small cut in the side just under the dome. Put the knife in at an angle and then cut across the inside but don’t let the knife go through the cake. Once you have done this, remove the knife and then cut a circle in the bottom of the cake. If you did it correctly, the entire interior of the cake should pop out.
Now don’t throw this away! Simply trim the inside part of the cake and save the rest to seal the bottom.
Then fill a pastry bag with some buttercream and add to the center of the cakes. Make sure not to add too much or it will squirt out once you try to close it up.
Then add the trimmed cake bottom to seal. Next melt the butter and remove the foam from the top to reveal the clear yellow liquid butter. Add it to a medium sized bowl. Then add the sugar and cinnamon to another medium sized bowl. Take each muffin and dip them in the melted butter coating the cake completely, and then add this to the cinnamon sugar. Use a spoon to coat it with cinnamon sugar all around. It’s that easy and oh so delicious!
