Many people don’t have the time to bake from scratch, and those that do are always asking me about quick and easy snack cake recipes that they can make to have around the house for family and visiting friends. So, when it comes to finding recipes that are one bowl creations, I’m always eager to try them.

I came across this recipe on a website called just a pinch, and the photo itself reminded me so much of carrot cake…and I love carrot cake. This was not only easy to make but I will tell you that it is also a cake that you can definitely dress up for a nicer function where a more decorated version would be required.

Susan, who posted the recipe for the cake, suggested that the sugar be cut back to 1 ½ cups. After making the recipe twice, I ended up cutting the sugar back to 1 ¼ cups. If you would like it sweeter, by all means keep it at the suggested amount. I also added fresh pineapple and not canned crushed pineapple as the recipe suggested…mostly because I have an aversion to canned anything these days, but canned pineapple is the easier way to go. Since I did not add canned pineapple, I also did not add the juice as the recipe suggested. The recipe worked just fine without it, but use it if you like.  I also added a little oil which the recipe really needed for a more well rounded moistness plus I added a little dessicated coconut. If you don’t like coconut, just omit it.

I will tell you that the house smelled absolutely amazing from the pineapple as it was baking and we really could not wait to dig in. The cake is served with a cream cheese frosting which makes for a totally irresistible combination. I have provided my own cream cheese frosting recipe, but feel free to use your own if you have one that you enjoy. This cake will not rise very much, so it will be very easy for you to add your frosting evenly. Once you start eating this cake, you will find it hard to pull yourself away from the table…

Preacher’s Cake (makes 1-8” x 8” square cake)
2 eggs (3.6 oz)
1 ¼ cups sugar (8.3 oz)
2 teaspoons vanilla (or rum/rum extract if you like)
2 tablespoons canola oil (I used walnut oil)
20 oz crushed pineapple including the juice, if you like (about 2 ¾ cups, I used fresh but use canned if you prefer)
½ cup walnuts or pecans (2 oz), medium ground
2 cups flour (10 oz)
2 tablespoons dessicated coconut **optional
2 teaspoons baking soda
½ teaspoon salt

In a medium sized bowl add the eggs, sugar, vanilla (or rum/rum extract), oil and crushed pineapple. Sift the flour, salt and baking soda and add that into the bowl and mix well. Lastly add the walnuts and the coconut and mix until well incorporated. Grease and line your 8”x8” square pan, pour in the batter and bake at 350°F for about 30-40 minutes until the cake is golden brown on top and springs back when touched in the center. Using a tester will not work here, because the cake is very moist and make appear under cooked.  Allow the cake to cool completely, then invert onto your serving dish and either serve it plain dusted with a little powdered sugar or top it with the cream cheese frosting. You can also bake this in an oven proof corning ware dish (pyrex) and serve it directly out of the dish without the need for a separate platter.

Cream Cheese Frosting
8 oz butter, softened
12 oz cream cheese, softened
1 ¾ cups powdered sugar, sifted
4 teaspoons vanilla

Add the cream cheese to the bowl of your stand mixer and using the paddle attachment begin creaming it, then slowly add the softened butter until it has all been incorporated. Sift the powdered sugar and add a little at a time until it has all been incorporated. Lastly, add the vanilla and taste to see if it is sweet enough for you.

    Hi Gina! no, this is one layer that was baked in a small square cake pan. Once the cake had cooled, I place the frosting in a piping bag and used a smooth round tip that was about 1/2 inch wide, and piped out little bubbles of frosting on the entire top of the cake. When I create recipes, I try to keep them simple, even in the decoration so that anyone can make them…and this is very easy to achieve, so I hope you have a chance to try it.

  9. Turned out AMAZING! Made to bring to a dinner at my in-laws and it was a hit! I had no regular flour in my pantry, so I substituted Cake Flour and also threw in a few handfuls of some Bob’s Mill Unsweetened Flaked Coconut. Thanks for this simple dessert!

  10. If it is one cake baked in a square pan, as you say, then you obviously cut it in half and spread a layer of cream cheese frosting between the two layers. That’s the only way to get the frosting in the middle of the cake.

    Exactly right Jules, or you can bake the 2 halves and put them together when they are cool. I find that most people prefer to bake them separately instead of having to slice them in half….but then again, you don’t have to frost the cake in the center at all! The icing on the top is more than enough…

    Dessicated coconut is simply dried coconut that is not sweetened or treated with anything. You can find this in a fine or coarse texture and I like the coarse one better. The fine coconut behaves too much like flour and may throw off your recipe. You can find this in Whole Foods, and it is labelled as shredded coconut, unsweetened…you can even find the organic version…hope that helps!

    Thanks for sharing this great recipe! I just made it in cupcakes and it was delicious! So moist, tender, and soft, just perfect! I did not make it with the coconut as my husband is not a fan, but I can see how it will be awesome with it. I think next time I will try it with coconut. I did add rum and they tasted fantastic. I baked the cupcakes for exactly 18-19 minutes and they were perfect! I made a coconut custard filling too and topped them off with cream cheese frosting- out of this world good!   28. My Friend Renee used to make a similar cake to this. I used her recipe for years..EXCEPT, though most of the ingredients are the same, we were young Mom’s doing sugar free and whole wheat…SO, we used WHOLE WHEAT flour, in place of the sugar in this recipe we used 1/4 HONEY (though Agave would be good too) PLUS 1/2 CUT CHOPPED DATES. Everything else looks just about the same. This recipe made great muffins too.

    Hi Bo! Here is a great link to flour conversions. When coming across recipes that use different types of flours, their weight will be different because some flours are heavier due to their protein content. I cup of All purpose flour is about 5 oz (125g), whereas the weight of cake flour can be as low as 4 or 4.5oz. The weight of flour also depends on the weather, so if it is a dry day you may use a little more and if it is raining you may use a little less…this is usually something bread bakers have to worry more about…hope that helps!

    Hi Mary, I just did it by hand. The only time I will use a mixer is when I need to aerate the whites or the yolks. Other than that, it’s just by hand which is not really difficult to do.

    Hi, I baked this yesterday. Delish. My housemates are health nuts so I tried a variation. I used almond flour, and almond extract. I also added a ripe mashed banana just cuz it was going to go bad. It turned out super delicious!!! Everyone wants the recipe. I didn’t make the icing, it was yummy as is. Although probably because of the almond flour, it didn’t pop out. No worries, we ate it out of the pan. I was thinking that probably the flour conversion and weather (which I had no clue about) were factors in it not staying fully intact. It was spongey enough and stayed together; perhaps I didn’t grease the pan enough. Curious to hear what you think.

    Hi Mabelle, thanks for writing in about this delicious cake. It sounds as though you added extra moisture to the cake which is the reason why it did not rise like others. The addition of the banana and the and the almond flour, which isn’t actually flour, but finely ground nuts, adds not only moisture but extra fat (from the nuts). If you prefer to keep adding them, you may want to remove some pineapple or simply not add the juice. You may also want to omit the oil altogether. In baking, you must remember that when you add something, you must balance out the other ingredients so you usually need to take something away….it may be a little trial and error until you figure it out to where you are completely happy with it.
