Friday Night Cocktail: Homemade (Bailey’s) Irish Cream

Today’s post is not really a cocktail but an after dinner drink…I got this recipe from a friend of mine, Karen Wilder, who with her husband Jim Wilder owns The Wild Orchid Cafe along with their catering operation called Company’s Coming in Eastport, Maryland. These folks have been dishing up delicious food for many years, so when Karen offers up a great drink, we should try it. I must say this was absolutely delicious! Karen was right when she said, “after you try this, you will never buy that store bought stuff again…”

We made it today and served it over ice and she was absolutely right! We also made it with hot coffee and it was just as delicious…

Homemade Irish Cream

2 cups heavy cream

1 can sweetened condensed milk

1-2/3 cups Irish Whiskey

2 teaspoons good quality instant coffee (like medaglio d’ oro)

2 Tablespoons chocolate syrup

1 teaspoon vanilla

Pour 1- 1 /2 cups of cream into a bowl and put the other half in a microwave safe cup. Heat the half cup slightly in the microwave until warm, then add the 2 teaspoons of instant coffee and the 2 Tablespoons of chocolate syrup. Stir everything well together and once everything has melted, add it in with the rest of the cream in the larger bowl. Then add the condensed milk, Irish Whiskey and vanilla and mix it all together until well combined. Cover and refrigerate or serve right away over ice. You can also serve this warm (which we also tried), by filling your mug 3/4 of the way with hot coffee and then the rest of the way with this mixture. Both ways were delicious!
