With the Holidays coming up, I wanted to share my recipe for a quick apple & cranberry compote that I make every year. I usually add a little fresh squeezed orange juice in the liquid, and a few drops of orange oil (from the orange skins), and it is truly lovely and luscious. This goes really well with any savory dish, especially turkey and pork, but it is also delicious over ice cream, yogurt or even use as jam on toast. This is also absolutely delicious to serve with an assortment of different cheeses on a crudite tray. Sometimes I add walnuts for an extra special treat.

Apple Cranberry Compote
½ cup fresh orange juice
½ cup filtered water
¼ cup honey
¼ cup granulated sugar
Pinch of dried cloves
1 cinnamon stick
5 drops natural orange oil
4 apples, chopped
¾ cup fresh cranberries (I have used dried also)
½ cup chopped walnuts, previously roasted**optional
Add the first seven ingredients to a medium sized pot and heat until everything the liquid is almost to a boil. Add all of the fruit (and nuts if using) and stir well together. Wait until the liquid comes back to a boil and then reduce it down to a moderate heat. Allow to cook for about 1 hour, stirring occasionally to prevent it from burning. The mixture will thicken due to the natural pectin in the apple, and all of the cranberries will pop and release their own juice also. Remove the cinnamon stick and serve warm.
