Guacamole is one of the easiest and healthiest snacks you can choose to eat. It is so versatile that you can enjoy it as a dip with chips of your choice, as an accompaniment to tacos, burritos, tostadas, steak or chicken or just about anything! The creaminess of the avocado can also double as a salad dressing by just adding a scoop of prepared guacamole on top of a fresh chopped salad…especially good if you are trying to cut back on some unnecessary calories. So, since to day is the last day of our week long Cinco de Mayo celebration, I give you the humble guacamole that you can eat at any time of the year…
Zesty Guacamole

2 ripe avocados
2 medium roma tomatoes, seeded and diced
zest and juice of 1 lime
1/2 cup finely chopped vidalia onions
3 Tablespoons chopped cilantro
1 Tablespoon chopped parsley
1 jalapeno pepper, seeded and chopped finely
1 teaspoon red pepper flakes
1/4 t each salt and pepper
Cheesy pita crisps
Finely dice the onion, rinse it under cold water and place it in a medium sized bowl. Seed and dice the tomatoes and add to the onions. Zest the lime, then juice it and set aside in a small bowl. Cut the avocado in half and remove the large seed. Take a butter knife and score the avocado into cubes while it is still in its skin, then take a large tablespoon and scoop it all out into your serving bowl. Once you have done this to both avocados, immediately add the lime juice and zest. If you wait too long, the avocado will start to turn an unappealing brown color. Add the parsley, cilantro, jalapeno, red pepper flakes and salt and pepper. If you need more salt, you can add it now. Toss everything together, cover and refrigerate for at least half an hour. We served it with cheesy pita chips that were even better than tortilla chips, but you can use whatever you like.
