I’m sure you’ve seen the bags of plaintain chips at the grocery store like I have, and I don’t know about you but I think that they are quite pricey! Fresh plaintains are so inexpensive and you can make a huge batch for a few dollars and add your own spice combination…so why even bother buying them! They key to making great chips is that the plaintains have to be very green…if they are turning yellow in the slightest bit, they will not work as crispy chips but remain something in between. If they are really yellow, they are actually called platanos maduros, or ripe plantains that develop a lovely softness and sweetness…These are delicious when very ripe due to the natural sugar that develops in the plantain which then creates a lovely char on the outside when fried and adds to that addictive sweet/salty flavor that is achieved when tossed with a good quality salt…I tell you that this is a perfect recipe for a serious addiction.

You can make these and just coat them with your own blend of spices…make them sweet or make them spicy…coat them with a dried cheese powder that you can buy online (take a look at the types of dried cheese products that are out there), or drizzle on some real cheese sauce. You can even use them in the place of tortilla chips when making nachos and top them with all of the usual goodies.

I like to serve these with my delicious guacamole, it goes so great with a few cold beers for something different and even more delicious.
