Savory Stuffed French Toast

Imagine going to your favorite diner or restaurant for breakfast and ordering that super deluxe breakfast that includes all of your guilty pleasures…eggs with gooey cheese, crispy bacon, moist and juicy sausage and thick slabs of pancakes or French toast slathered with melted butter and maple syrup. I don’t know about you, but when I go out for breakfast, I know that I am going to indulge in something I may not normally make at home. While sitting there waiting for my 20 minutes of happiness on a plate, I rarely see egg white omelettes filled with steamed veggies being carried out on trays to eagerly awaiting customers. The normal fare in these places guarantees job security to cardiologists for many years to come.

So here’s the idea……try to imagine this heaping plate of caloric heaven stuffed into a hunk of French toast and drizzled with warm maple syrup. Crazy, you say? Well, not as crazy as the ever popular glazed donut sandwich pictured here…

Well, give me some credit…I think I have managed to maintain some degree of composure.

This idea all came about after my friends and family indulged for several days on some delicious homemade bread,  and I happened to notice that a small chunk was left over. I promptly hid it from hungry tummies and decided it was going to end up on the breakfast menu as French toast.

After that, it’s all a blur…I swear.

I began dreaming of that super deluxe breakfast, and before you knew it, I had the French toast stuffed with egg, crispy bacon and cheese. I served mine with a little tomato on the side…but don’t listen to me, go over to the wild side and pull out the butter and maple syrup,  I dare you.

Savory Stuffed French Toast

1 thick cut slice of bread (like texas toast)

1 fried egg

3 pieces of fried bacon or sausage

Cheese of your choice

2 eggs

2 tablespoons of milk

Butter **optional

Maple syrup **optional

Powdered sugar **optional

2-4 tablespoons canola oil or melted butter

Put the 2 eggs and the milk in a small bowl and whip until combined and set aside. Make sure to fry your egg and bacon and set them aside. Cut a pocket into your thick slice of bread, put in the cheese, then the egg, then the bacon and then more cheese. Press the bread down gently on the filling then dip this into the egg wash generously on both sides, and fry in a little canola oil or melted butter in a small sauté pan. Slowly flip the French toast a few times until it is nice and golden brown on both sides and the cheese has melted. Remove and serve warm with honey or maple syrup.
